It works on any string that has sufficient magnetic content.  If you move it up and down the string, you'll find points where the effect is much stronger (node points, or something).   Electric guitars often have pickups at one of these points, but they're a physical property of a tense string, so they will be present on acoustic instruments.  Remember though, if the strings on your instrument aren't sufficiently magnetic, you'll have problems getting a strong response.
