One MIDI cable from MIDI out on the footpedal to MIDI in on the Echoplex
is all you need.

You need to set the MIDI controller to send either Note or CC messages
which correspond to different Echoplex functions.  If you use Note
commands on the footpedal, set the "ControlSource" parameter to "Note." 
If you use CC commands, set "ControlSource" to "Control."  

Check the Echoplex instruction manual for whichever software version
you're using, and find the chart (should be under MIDI implementation)
that shows the different offset values for each function.
