So do I get it right that the hum setups do hum even if there are no MIDI 
devices connected?

There are (from my understanding) two possible sources for what you 
describe 
as high-pitched hum. Either a ground loop or EMI on the lines from the 
interface to the amp/mixer (which does not happen with your speakers 
because 
they might have a low-omic input, whereas the guitar amp does not and the 
inputs you use on the mixer might not).

There is the possibility to try the "plug everything in the same socket/in 
different sockets" thing you can try (focusing on the Mac and the amp in 
question). And if your power cables to these devices have more than two 
connectors, you might disconnect the PE (WARNING! Doing so will disenable 
this connector's safety function!).

And there's a workaround. Use a DI.
