I corresponded with John Fast and we discussed a specific solution for a multi-channel MIDI sustain pedal - it sounds like you're covering similar ground.  In my case he recommended using their 'MIDI Solutions Event Processor Plus' which has a graphical programming interface.  No hex code required - and this alone was worth the price of admission...
