It's because of the big hard drive (no flash memory, as older models used) they look like a good deal for audio recording in at a non compressed format. But regarding the old iPod models you are perfectly right; there was the Linux hack and that Griffin or Belkin thingy available. If you still have a 1st generation iPod you can use the Linux hack to record full bandwidth audio on it.
