  Well, this isn't technically counterpoint,
but here is a really fun and fairly natural sounding 11/8 rhythm.

essentially,  you play a blues shuffle and cut it off at the end of the 
last beat.
I learned this from the 1st or 2nd Mahavishnu Orchestra record:
These are two records with wonderfully inventive odd time signatures on 
them
(hugely influential in my musical development as was Yes earlier on in 
the same vein)
