I am looking to upgrade my 2003 PowerBook to a MacBook pro. It is possible

be doing live recording of my concerts with as many as 16 tracks

If you will record to the system disc I would guess 7200 is necessary.
But I don't understand why you want to do that? Personally I always
look for laptops with a slower drive (I think that qualifies better
for music application since it makes the machine less loud) and the
fastest CPU and system bus I can find. Then I use several external
firewire drives for recording.
