"Layering lots of instruments" tend to sound good when done by the
guys usually hired for doing that. It is a specialized competence and
it takes a hell of a lot of computing power to set up a virtual
symphonic orchestra "in the box". So your point is totally accurate
;-))  Have a look at the Garageband orchestral apple loops that got
installed with the Logic Studio package. There should be a number of
useful stereo recordings of specific groups from an orchestra playing
melodies, scales etc. If you find a good sample you may need to cut,
paste and transpose to fit it in. If mocking it up in Logic you may
find use for the Bounce In Place feature as well as the Make Sampler
Instrument feature. You may also need to bounce an apple loop into a
new audio file in order to escape its pesky habit of following tempo
etc
