My advice is: set up your macbook pro and go for Mobius software.
Based on the EDP architecture it has 8 stereo looping tracks (that you can easily mute and trigger on the fly) plus many many useful options (track and MIDI configurations and scripts, to name a few).

I was looking at the Digitech Jamman Stereo or the Delay, but I don't know if either one will absolutely do what I need, or if there is one that is better suited for that?

If not, I am also open to getting an Ipad and going the software route, or setting up my Macbook Pro as well...
