he has all kinds of good info on this topic.

the physical size of the pot depends on whether you have
the old style pedal or the new ones.
old = english = 1/4 inch shaft.
new = metric = i can't remember, i had the 1/4 incher.

anyway, the allaccess uses the pot as a voltage
divider, so any value will be ok. there will be
some lower limit, but 100k will work, though
10k is more common in the quality pots).
i'm thinking hans recommended a conductive plastic pot.
he gave out some model numbers a while back, 
check the archives ('ernie ball;pot;hans')

you can also wire the pedal to use a single trs jack to make
the cabling simpler (otherwise you use an insert cable)
