Just in case others are not aware of it, for $10 US you can buy a PC-compatible game controller (I have a Logitech Precision), download free software that converts it to MIDI (I use Rejoice), and voila - MIDI controller. No foot pedal connections, not so easy to adjust with one hand - but dirt cheap, very small and light. I know that Kenton sells circuit boards for projects like that, e.g.: http://www.kentonuk.com/kenton/pcb_project.shtml
