I'm not a hardware specialist but think like you that it is probably
true even if running Windows on the box. I know that there is also a
need for running applications in 64 bit mode to take advance of more
RAM than 4 GB. I've tried, out of curiosity, to run music applications
Logic and Mainstage at 64 bit in OS X and found no chance in
functionality or performance. And I never load up that massive samle
libraries to justify more than 4 GB.

But I love running Logic at audio settings 24 bit and 96 kHz because
virtual instruments, compressors and EQ sound so much better! And that
makes the summing while mixing sound better as well. But on my 2.2 C2D
Macbook 24/96 puts a lot of strain on the CPU and forces me to compose
at 24/44.1 and only switch to the better sounding for mixing and
before I can even play back the project at 24/96 I have to freeze all
tracks. This makes producing very slow and inefficient. That's the
only reason I can find for getting a i7 iMac. The i7 MBP only come
with that huge screen and I don't like laptops with huge screens
(prefer 13" and huge external screens at local work spaces to plug in
to).
