There's even older tricks from the loop, which don't require MIDI or a proper looper - however, some kind of "sus" operation is very helpful (if your delay pedal doesn't support that, which is usually the case, you can use a properly wired footswitch with additional jack for that anti-killswitch effect; I think they're even sold under some name).

In my experience (and this is just the oddness of the human brain), if you drop in short beeps and boops in any timing to an existing loop, you will always find that it ends up making up some kind of groove (however odd or untight).

Take this example:

Starting at about 3:20, I add short beeps and boops on top of an existing loop in an entirely unquantized fashion. It seems to form a groove - which I hadn't in mind when I did this, it was more of some random button presses.

The faux virtuoso arpeggi in this one http://moinlabs.bandcamp.com/track/leather-allergy were done the same way.
